One of my favourite cakes, Colibri cake or Hummingbird cake, originated from Jamaica, this cake is cinnamon scented and packed with tropical fruits (bananas and pineapple) and pecan nuts.

The Hummingbird cake or Colibri cake is described as a marriage of banana bread and carrot cake, but without the carrots. Imagine a banana cake with pineapple and pecans in it and with spices, all cover it in cream cheese frosting. Pure “Yumminess” !
